Do stores watch people on security cameras or do they just record?

I have stolen from Target and Walmart which both have security cameras. I have never been caught but I was just wondering do they have people sitting there watching people on camera or do they just record and watch later? If they do watch them live how come I have never gotten caught?

they’re supposed to be watching – sometimes they just don’t care enough … most security cameras have the ability to zoom in so near and clearly that they can read the numbers on a dollar bill
